Undoubtedly, my clients always ask for tips on what to eat for these big summer weekends. My advice is to bring something you enjoy and aligns with your nutrition goals. The easiest dish? A veggie loaded pasta salad!
WHY THIS PASTA SALAD IS DIFFERENT
Okay – my husband actually calls this “a salad with pasta.” So I’m going to put that out there, this salad is very heavy on the veggies (hello vitamins, antioxidants, and fiber). With that being said, you could absolutely add more pasta to this dish! Which brings me to the next point, the pasta is key!
I recommend a bean of lentil based pasta! You’re going to get more protein and fiber in each serving (wayyyyy more than traditional pasta).
